"A green valley at the heart of the Neuchâtel mountains welcomes us to one of the two demonstration cheese dairies of Gruyère AOC in Switzerland. Having arrived early, we can watch how the cheese is produced from a visitors’ balcony above the production hall. The different stages of the cheese production are explained to us on information panels. We are able to learn a lot and time passes rapidly, but with all this cheese right before our eyes, we also want to taste some! Off we go to savor the delicacies such as the Bleuchâtel, an invention of the dairy owners."
